Ingredients

  • Fresh tomatoes
  • Onion – White or red
  • Garlic – 3-4 pieces
  • Black pepper or cayenne pepper- optional
  • Soy sauce
  • Corn starch ( optional)
  • Lemon juice or vinegar if you prefer tangy
  • brown sugar and ketchup if you prefer sweet
  • Spices according to your preference. I added oregano

Equipments needed

  • Chopping board
  • knife
  • blender (optional) for blending tomatoes before cooking them)
  • medium cooking pot
  • cooking stick and ladle

Steps

Prepare and gather all the ingredients and put them on a clean counter space.

  • Wash the tomatoes and cut them into pieces and put them in a blender
  • Blend the tomatoes or just cut them and set them aside
  • chop the onions and set them aside
  • crush the garlic into a paste. I used a mortar and pestle

Steps cont’

  • In a cooking pot, add any cooking oil of your choice, ( I use canola oil) then add chopped onions
  • Add the onion in the pot and saute in medium heat until light brown.
  • Add the crushed garlic and keep stirring until flavorful.
  • Add the chopped tomatoes or the blended tomato puree into the pot with the cooked onion
  • Stir and let it cook on medium heat until most of the water evaporates. About twenty minutes. Remember to stir half way through.

  • Add the spices. I added black pepper and oregano.
  • Add soy sauce and stir
  • Mix corn starch with water and add this mixture into the cooking sauce until you get the desired thickness
  • To make it sweet and savory, add brown sugar, ketchup and vinegar. Stir and taste to achieve the desired sweetness

What are your favorite types of foods?

I like banana bread, especially when I bake it myself.  I like the way it is filling and satisfying.  The kind that I bake is unique because I put very little or no sugar at all.

This is because I have been working on losing weight. and I am happy to report that I have seen tremendous results. 

In my baked banana bread, I add raisins or cranberries and some nuts.I enjoy my banana bread with green tea.

I also like Kenyan ugali with vegetables like kale or spinach and some beef or fish.  This meal is just the best 👌

When I crave some comfort food, I like a casserole because it warms the soul and satisfies. The rich combination of ingredients and savory meats, meld together to create a deliciously satisfying dish. Whether it’s lasagna, spaghetti bake or potato and cheese bake, casseroles allows for endless possibilities. They are a reliable favorite during chilly evenings or when one needs a little extra comfort in life.
